Common Name: Hing
Botanical Name: Ferula asafoetida
Family: Apiaceae (carrot or parsley family)
Other Names: Asafoetida, Devil’s Dung, Food of the Gods (in some cultures), Heeng (in Hindi)

🌿 Plant Description:

Type: Perennial herb

Height: 1–2 meters (3–7 feet) tall

Stem: Erect, stout, and hollow

Leaves:

Feathery, finely divided (fern-like), and green-blue in color

Leaves form a rosette at the base in early growth stages

Flowers:

Small, yellow, clustered in large umbrella-like groups (called umbels)

Bloom in late spring or early summer

Root:

Thick, carrot-like taproot

This root is the source of the oleo-gum-resin known as Hing

🌱 Habitat & Cultivation:

Native to Iran and Afghanistan

Grown in arid to semi-arid climates

Prefers well-drained, sandy or loamy soil

Requires cold winters and dry summers for best resin yield

🌬️ Resin (Hing):

Extracted from the root by cutting the root and collecting the milky latex, which hardens into resin

Has a strong, pungent smell due to sulfur compounds

Used in cooking (especially Indian cuisine) and traditional medicine (Ayurveda, Unani, folk remedies)

🧄 Flavor Profile:

Raw: Strong, sulfurous, almost rotten smell (hence "devil's dung")

Cooked: Onion-garlic-like aroma; enhances savory dishes with umami flavor
